Quick-Roasted Potato Wedges

Ingredients
1 lb. small red potatoes, cut into wedges1 tbsp. olive oil1/2 tsp. pepper1/2 tsp. salt
Directions
Cut potatoes into 1 inch wedges. Toss w/ olive oil, pepper, and salt. Arrange on baking sheet.
Bake @ 425 for 25 min. or until potatoes are tender, stirring once.
