High Protein Pancakes

Ingredients
1 c. cottage cheese, 1%4 eggs1/2 c. white flour (whole wheat flour works well also)1/2 t. salt1/4 c. canola oil1/2 c. milk, 2%1/2 t. vanilla extract
Directions
Mix all ingredients in a blender until combined. Pour onto hot, greased griddle into 4" pancakes. Flip when pancakes have set (around three minutes.) Makes approximately 18 pancakes.
