Oats, 2 cup (I use Bob's Red Mill thick cut rolled oats which provide a very satisfying texture.)Coconut Flour 2/3 cupHemp Protein Powder 2/3 cupSpelt Flour 2/3 cupEgg, fresh, 4 large Salt, 1 tsp Baking Powder, 4 tsp Butter, salted, 1 tbsp Motts Natural Apple Sauce, 4 oz snack cupXylitol, 1/3 cupMilk, 2%, 1 3/4 cupMolasses, blackstrap, 1/2 cupGinger, ground, 3 heaping tsp Cinnamon, ground, 1 heaping tsp
Mix dry ingredients together, add wet ingredients and mix with a spoon. Fill muffin cups 2/3 full and bake at 400 degrees for 18 minutes. Feel free to add chocolate chips or nuts or whatever you like.
