Low Carb Stuffed Peppers

Ingredients
4 Large Green Peppers halved, stem and seeds removed1 to 2 lbs ground lean hamburger1 can diced tomaotes2 cans mushroom stems and pieces1 small onion shopped1 to 2 cups fine shredded italian Cheese
Directions
Brown hamburger and onion in skillet. Add tomatoes and mushrooms after brown.

Slice 4 large green peppers removing stem and seeds to form a boat. Fill peppers with mixture and cover with foil. Bake at 400 for 30 minutes (this leaves a little snap left in the peppers).

Remove from oven and cover in shredded cheese. Bake 10 o 15 minutes until cheese melts and browns slightly.

    I think the single serving is not right. I don't think a person should eat 1-2 lb of anything in a single serving. But this is what I am going to have for dinner. - 8/23/14
