Ingredients
Directions
3 raw onions, sliced thin2 tbsp olive oil2 cans (14 oz) beef broth2-3 tsp worcestershire sauce1 pinch ground black pepperOn top (note the calories for this recipe don't include these items):6 slices french bread2/3 c. reduced fat swiss cheese
Cook and stir onions in vegetable oil in a covered large saucepan over medium heat for 20 minutes. Stir in the beef broth, Worcestershire sauce and black pepper; heat to a boil. Remove from heat.
Place bread on a baking sheet; sprinkle bread with cheese. Broil 4-to-5 inches from heat for about 1 minute or until cheese is melted and golden.
Ladle soup into bowls and top with bread.
Note: As a variation I've used regular croutons like for your salad and added them instead of the french bread. I've also used a sprinkling of freshly grated parmesean when I didn't have swiss cheese and both of those variations were yummy.
