Three Bean Vegetarian Chili

1 15 oz can Black beans1 15 oz can Kidney Beans1 15 oz can Garbanzo beans1 16 oz can diced tomatoes2 cups Light Life Smart Ground Original Veggie crumbles (1pkg)2 tbs olive oil1 cup Textured Vegetable Protein1 medium onion chopped1 tbsp cayenne pepper (or to taste)1-2 tbsp cumin powder (or to taste)1 tbsp minced garlic2 cups water
Sautee the onions in 2 tbsp olive oil
stir in seasonings and garlic
add tomatoes and beans
add in water and textured vegetable protein
cook at a slow boil
adjust seasoning as chili cooks
In the last five minutes of cooking (when chili is at a good consistency) saute the veggie crumble in a pan coated in cooking spray. Once it is crumble and dry add to the chili.
Makes about 8 1cup servings
