Bacon Fried Rice

Ingredients
1 bacon strip1 large egg1 1/2 cup cooked and chilled brown rice1 cup frozen mixed vegetables2 scallion, sliced thinly1 Tbsp. soy sauce
Directions
Brown bacon strip until crisp. Set aside. Scramble egg in fat that remains in the skillet. Set aside. Add mixede vegetables and scallions to fat. Cook until vegetables are heated through. Stir in cold brown rice. Return bacon and egg to mix. Heat through. Add soy sauce to taste.
