Eggplant Parmesan with Pasta

1 eggplant, peeled and sliced into 1/2 inch rounds1 egg, beaten with 1/4 cup water1/3 c. seasoned bread crumbs1/3 c. parmasan cheese1 tsp. garlic powder3 c. spaghetti sauce2/3 c. mozzarella cheese, part skim8 oz. Dreamfields pasta
Preheat oven to 450. Spray cookie sheet with cooking spray and set aside. Mix together breadcrumbs, parmesan cheese and garlic powder in a shallow bowl.
Place eggplant in egg-water wash, then in breadcrumb mixture. Place on prepared cookie sheet.
Bake for 15-20 min, turning halfway or until browned and crispy. Meanwhile, heat spaghetti sauce in a sauce pan and cook noodles to package directions.
Put a spoonful of sauce on each eggplant round, top with cheese and bake until melted.
Serve with pasta and additional sauce.
