Vegetarian Okra Gumbo

Ingredients
1 tsp Extra Virgin Olive Oil2 medium Onions, diced2 Bell Peppers, diced1 cup Celery, chopped4 Garlic Cloves, finely chopped2 14oz. can Diced Tomatoes6 cups Water2 cups Kidney Beans, rinsed and drained2 cups Okra, sliced1 tsp Thyme1/3 tsp Cayenne PepperSalt and Pepper to taste
Directions
Heat the oil in a large saucepan over medium heat. Add the onion, bell pepper, celery, and garlic. Cover and cook, stirring occasionally for 5 minutes or until soft. Remove cover, add the water, tomatoes, okra, thyme, salt, pepper, and cayenne and bring to a simmer. Simmer over low heat, stirring occasionally for 30 minutes. Add the beans and simmer 5 to 10 minutes longer to heat through. Taste and adjust the seasoning. Serve the hot gumbo over rice. Enjoy :)
