Black Bean & Corn Mexican Dip

1 can black beans, rinsed1 can white shoepeg corn, rinsed2 roma tomatoes, chopped1/2 small onion, chopped1 small green bell pepper, chopped2 Tablespoons cilantro, chopped1 pkg. Good Seasonings dry Italian dressing mix1/4 cup white vinegar1/4 cup water, plus 3 Tablespoons1/4 cup extra virgin olive oil
Combine dressing mix, water, vinegar & olive oil in a jar and shake, shake, shake!
Toss all other ingredients together and pour prepared dressing mix over it - toss again.
Chill 2 hours or more.
Serve with baked tortilla chips or pita chips.
Makes 15 servings or 1/3 cup each.
