Twice Baked Mashed Potatoes

Ingredients
4 c. leftover mashed potatoes (real or instant)4 slices cheese of choice2 T Olive Oil
Directions
Grease 9 x 13 dish.

Line bottom of dish with a layer of mashed potatoes.

Place cheese slices on top to cover layer of potatoes without touching the sides.

Place rest of potatoes on top of cheese, sealing cheese in potatoes.

Brush top with Olive oil.

Bake on 350 degrees for 30 minutes.
