Rumbamel's Zuccini and Brown Rice Soup

-2 large cloves of fresh garlic, minced-2 C chopped onion-4 C chopped zuccini (bite sized, about 2 medium)-1 can 14.5 oz Italian diced tomatoes-1 can 15 oz white beans, drained and rinsed-1/2 C Fat Free chicken broth-2 C Rumbamel's Success Brown Rice made with Chicken Broth (Success Boil in the Bag Brown Rice made with FF chicken broth)-Salt and Ground Pepper to taste
--Cook your rice in the microwave.(1 1/4 C ff chicken broth and one bag of rice for 10 minutes uncovered). While it's cooking, you can chop the zuccini, onions and mince the garlic.
--Saute the zucc, onions and garlic in a medium pot over med./low heat until tender, stirring often. When tender, add the drained and rinsed beans, the tomatoes, 1/2C chicken broth and the cooked rice. Stir to mix and season with your salt and ground pepper to taste. Warm and serve.
--Makes 8 servings of 1 C each.
