Corned Beef and Rice

Ingredients
1 c chopped raw onion1.5 tsp raw chopped garlic2 (12 oz) cans Hormel Corned Beef-NOT HASH!!2 (12 oz) cans Diced Tomatoes (can use Stewed Tomatoes instead)6 med sized Bay Leaves6 cups cooked rice
Directions
Spray frying pan with Pam and add onion and garlic. Saute on med heat for 5 mins. Add corned beef and break up. Add salt and pepper to taste. Fry until meat turns a darker red. Add tomatoes and add 2 cans of water to meat. Mix well. Add bay leaves and simmer on med low heat until water is evaporated. Remove bay leaf before serving and serve over rice.
