Eggplant Pepperoni Pizzas

Ingredients
1 Eggplant peeled, sliced to 1/2" thick roundsPepperoni slicesPizza SauceMozzarella cheese
Directions
Peel & slice Eggplant, place in microwaveable dish 1 layer thick. Microwave until tender approx 4 minutes. Place warm Eggplant on cookie sheet. Place 1 TBSP Pizza Sauce on each Eggplant round. Sprinkle very lightly with Mozzarella cheese. Place 4 Pepperoni (more or less as desired) on each round. Cover Pepperoni with Mozzarella cheese. Bake at 350 until hot and cheese is bubbly.
