4 skinless chicken/turkey breasts, diced1 onion, chopped1 can of chopped tomatoes3 garlic cloves, crushed3 tbsp olive oil100ml water3 tbsp balti curry paste300g basmati rice
In a large frying pan heat the olive oil and place the chopped onion and garlic until the onions start to go soft, add the diced chicken/turkey and cook until sealed, add the balti paste and ensure the chicken/turkey and onions are completely coated (you can add more or less paste according to taste) turn down the heat and add the can of tomatoes and water and bring to a slow simmer. Stir occasionally. Cook rice according to intructions on packet. Serve and enjoy!! Serves 4
