Green Chile Chicken Enchiladas

Ingredients
1 14-oz. can tomatoes, no salt added1 8-oz. can tomato sauce, no salt added2 t. chili powder.5 t. cumin.5 c. chopped onion.25 t. salt7 oz. cooked chicken breast4 oz. neufchatel cheese4 oz. can diced green chiles8 LaTortilla Factory tortillas
Directions
Cook tomatoes, tomato sauce, onion, chili powder, cumin and salt until onion is cooked and sauce is thickened. While that is cooking, blend Neufchatel cheese and chiles in a bowl, then add chicken and mix. Spread 1/2 c. sauce in the bottom of an 8" x 12" pan. Place 1/8 of the chicken mixture in each of the tortillas and roll up. Place the filled tortillas, seam side down, in the pan. Pour the rest of the sauce over the enchiladas and sprinkle cheese over the top. Bake at 350 F. and bake 20 min. or until cheese is melted. Makes four servings of 2 enchiladas each.
