Cucumber, Carrot and Poppyseed Pasta Salad

Ingredients
1 box Whole Grain Medium Shells (13.25 oz)3/4 box Whole Grain Rotini (about 10 oz)1 1/4 cup Olive Oil Mayonase3 1/2 cups carrots, chopped2 cups cucumber, peeled and chopped2 teaspoons salt3/4 teaspoons black pepper4 teaspoons poppyseeds
Directions
Makes 24 1/2 cup servings
Cook shells and rotini to desired doness. Drain and cool with cold water.
While pasta is cooking, prepare carrots and cucumber by chopping into bitesized pieces.
When pasta is about room temperature or cooler mix all ingredients together.
Chill for 2 hours or until cold.
If you want to add different or more seasoning, feel free to as needed to pair with main dish... I make this with spicy pulled pork sandwiches so I enjoy a light flavor.
