Chicken and Orzo Salad

Ingredients
Chicken breasts, poached (half a pound worth to serve 2)Orzo (150 grams)Fresh Spinach (185 g, about 6 cups)Cherry tomatoes, halved (half a pound)Pesto (a bit less than a third of a cup)Olive oil (1 tbsp)White Wine Vinegar (2 tbsp)
Directions
Serves 2 as a very generous dinner, would serve 4 as a salad course.

Poach the chicken breasts until opaque, about 8-10 minutes. Bring water for the pasta to a boil and cook the orzo according to package directions. When the chicken is cooked remove from the water and chop into bite size pieces.

Meanwhile make the vinaigrette. Mix together the pesto, vinegar and salt and pepper to taste. Add the oil slowly, beating to incorporate.

Drain the orzo and rinse in cold water. Add the cooked pasta to the dressing and stir to coat. Add the tomatoes and chicken and stir to coat. Add the spinach and mix, then serve.

    This was tasty. I recommend adding some crumbled feta cheese for flavor. Also, I sauteed the spinach before adding it to the orzo. - 11/7/10
