Ingredients
Pumpkin, cooked, 2 cup pureeWhole Wheat Flour, 2 cupEgg, fresh, 2 largeGranulated Sugar, .75 cupFage Total Greek Yogurt, .66 cupApple cider or juice, unsweetened, .33 cupWalnuts, .5 cup, chopped Carrots, raw, .33 cup, grated (1 med size)Raisins, .25 cupCoconut, raw, .25 cup, shreddedVanilla Extract, 1 tsp Baking Powder, 1 tsp Baking Soda, 1 tspSalt, .75 tspCinnamon, ground, 1 tsp Pumpkin Pie spice, 1 tsp Nutmeg, ground, .5 tsp
Directions
Combine wet ingredients in medium size mixing bowl. Set aside.
Combine dry ingredients in large mixing bowl.
Combine wet ingredients with dry ingredients & mix thoroughly.
Pour batter into muffin tins that are either lined with cupcake paper or have been sprayed with a cooking spray, til 2/3 full.

Bake at 350 degrees for approximately 25-30 minutes. Makes 16-18 muffins.
