Apple Butter n' Oats Raisin - Nut Bread

1/2 cup of fed sourdough starterpinch instant yeast (optional)1/4 cup brown sugar3/4 cup apple butter1 cup flour2 cups whole wheat bread flour1 cup rolled oats1/4 tsp salt2 tsp pumpkin pie spice1 tsp vital wheat gluten 2 tbsp melted butter1 tbsp vanilla1/3 cup sultana raisins, soaked in hot water and drained1/3 cup pecans, chopped1/4 cup toasted pumpkin seeds
Mix starter and yeast (if using) in a large bowl. Add brown sugar and apple butter and stir to combine well.
Add flours, oats, salt, spice and gluten and knead for 5 minutes. Let lest 5 minutes.
Add butter and vanilla and knead for 7-10 minutes.
Place in a greased bowl, turning to coat.
Cover and allow to rest 1 hour.
Knead in the raisins, pecans and seeds, place back into the bowl. Recover and allow to rest 1 hour.
Shape into a loaf and place into a greased loaf pan. Cover and allow to rise 1 1/2 hours.
Preheat oven to 350F.
Bake loaf 45 minutes. Turn out of the pan immediately and cool completely on a rack before slicing.
