Egg Substitute Baked Muffin Cups

Ingredients

1 1/2 cups egg substitute1/2 unsweetened applesauce1 1/4 cup flour1/2 oats1/2 teaspoon salt1 cup frozen for fresh shredded potatoes1 package Canadian bacon1/2 cup onions
Spray with Pam a 12 cup muffin pan
Heat oven to 375 degrees.
Place chopped onion and potatoes in micro and cook for 2 minutes or until soft.
In a large bowl and all other ingredients keeping back a 1/4 cup of cheese. Mix until blended.
Place evenly in muffin tin.
Bake for at least 20 minutes or until tops are mildly browned.
