Mini Twice Baked Potato Bites

Ingredients
40 small redskin potatoes2 Cup sour cream2 Cups Cheddar, shredded1 package cream cheese3 T chives, chopped12 slices of bacon, cooked olive oil
Directions
Brush potatoes with olive oil, then bake until tender.

Cut each potato in half, and scoop out a portion of each half. Place potato that has been scooped out, and combine it with remaining ingredients.

Fill each potato shell with mixture, and bake at 350 until warmed through.
