Ingredients
Egg substitute, bell pepper, frozen shredded potatoes, cheddar cheese, canned mushrooms & pace salsa.
Directions
Preheat oven to 350 degrees and coat with cooking spray a Pyrex (5 cup) cooking dish. Thaw shredded potatoes in a large glass bowl, chop bell pepper, drain canned mushroom & shred cheddar cheese. After potatoes are thawed add all (EXCEPT CHEDDAR CHEESE) ingredients and mix well. Pour mixture in coated Pyrex cooking dish and bake for 18 minutes. Remove from oven and top with the cheddar cheese, bake two more minutes. Split in half for TWO breakfast meals. Enjoy!
