Cumin seed, 1 tsp (remove) Ginger, ground, 1 tsp (remove) Mustard seed, yellow, 1 tsp (remove) Olive Oil, 1 tbsp (remove) Garlic, 1 tsp (remove) Onions, raw, 0.50 medium (2-1/2" dia) (remove) Spinach, fresh, 2 cup (remove) Coconut, raw, 0.20 cup, shredded (remove) Raw Green Mung (whole) - 0.5 cup, 3 serving (remove)Raw peanuts - 1 cup, 0.5 serving (remove)
0.5 cup cooked = 1 serving
Soak Mung dal in water and pressure cook mung dal + peanuts+ salt for 4 whistles.
In a separate pan heat oil and add mustard and cumin seeds. When they start spluttering add hing and chopped onion. When the onions start browning add chopped spinach. Now add grated ginger-garlic and stir fry. Now add cooked dal and cook for a few min. Add turmeric and chilli powder to taste.
The subzi should be thick and the beans not mushy.
Garnish with fresh coconut and serve hot.
