Cranberry Pumpkin Cookies

1/3 cup olive oil (vegan Margarine)1/2 cup unsweetened pumpkin puree1/3 cup sugar1/2 tsp ground cinnamon1/4 tsp ground ginger1/4 tsp ground cloves1/4 tsp salt1 tsp vanilla extract1 cup flour1/2 tsp baking powderEgg replacer equal to i egg1/4 cup pecans, roughly chopped1/4 cup dried cranberries
Preheat oven to 350 F
In a medium bowl, cream together the oil, pumpkin, sugar, cinnamon, ginger, cloves, salt, & vanilla extract until smooth.
Add the flour, baking powder, and egg replacer and stir together gently until just mixed.
Add the pecans and cranberries and stir gently until well blended.
Drop rounded tablespoons of dough onto cookie sheet, press down flat with your fingers and repeat the process until dough is gone.
Bake for 8-10 minutes
Let cool before removing from cookie sheet
Makes 12 large cookies
