Apple Raisin Bran Muffins (per muffin)

Ingredients
- Wheat flour, white, all-purpose, enriched, calcium-fortified, 2 cup- Natural Bran 1.5 cup - Original Quaker Oats Quick cooking oats, 0.25 cup- Baking Soda, 1.5 tsp- Salt, 0.5 tsp- Baking Powder, 0.5 tsp- Buttermilk, lowfat, 2 cup- Brown Sugar, 1.5 cup, unpacked- Molasses, 0.33 cup- Vanilla Extract, 1 tsp- Crisco Pure Vegetable Oil, 8 tbsp- Egg, fresh, 2 large- Apples, fresh, 1 medium (2-3/4" dia) (approx 3 per l - Raisins, 0.75 cup (not packed)
Directions
In a large bowl, stir together all the dry ingredients except the brown sugar. In a separate bowl, combine everything else except the apple and raisins. Pour over the dry ingredients, add the raisins and apple and stir together until just moistened. Cover and refrigerate for one hour or overnight.

Spoon into muffin tins and bake for 15-20 minutes in an oven heated to 375F. Makes 18 large muffins.
