Buckwheat Zucchini Power Muffins

Ingredients
Dry Ingredients1/2 cup coconut flour1/2 cup buckwheat flour1 cup protein powder1 tsp cinnamon1/4 tsp ground nutmeg1/2 cup STEVIVA BLEND1/2 cup chopped walnutsWet Ingredients1 cup mashed or grated zucchini2 eggs1/4 cup full fat sour cream2 tbsp walnut oil (or warmed coconut oil)
Directions
Preheat oven to 400 degrees.
Combine dry ingredients in a mixing bowl. Set aside. Combine wet ingredients in another bowl. (or do what I did and puree everythiong together in a good blender or vitamix). Add to dry ingredients and mix just until blended. Batter may still be lumpy.
Divide among muffing cups.
Bake for about 15 minutes.
