California Chicken Stir Fry

Ingredients
1/4 cup soy sauce1 tbsp cider vinegar1 tbs ketchup1/2 tsp ginger2 cloves garlic minced2 tbsp veg. oil4 cups Mann's California Stir Fry vegetables1 cup pineapple, chunks, drained1 lb boneless, skinless chicken breasts cut into strips6 cups cooked brown rice
Directions
In a small bowl, combine soy, vinegar, ketchup, ginger and set aside. In a large skillet stir fry chicken and garlic in oil for 6-7 minutes or until chicken is no longer pink. Add vegetables and stir fry for 3-4 minutes or until crisp tender. Stir in pineapple and soy sauce mix and heat through. Serve over brown rice.
