Ingredients
10 lb whole goose1 sweet onion2 lemons4 TBSP extra light olive oil1/2 tsp sage1/4 tsp thyme1/4 tsp salt1/4 tsp pepper
Directions
Preheat oven to 350 degrees. Rinse goose and pat dry. Prick skin (not meat). Peel and quarter onion. Quarter 1 lemon. Stuff onion and lemon quarters into goose; pin cavity closed with toothpicks. Zest remaining lemon into small bowl, then juice into same bowl. Add olive oil, sage, thyme, salt, and pepper; stir. Brush goose with mixture. Place goose on roasting rack in roasting pan and put in oven. Cook 15 to 20 minutes per pound, basting every half hour with pan drippings. Remove from oven; discard lemon and onion quarters. Let rest 15 minutes before carving.

    I think the calorie count is wrong. It is the goose. If you don't eat the skin or bones, there is not nearly as many calories! I modified the recipe to account for 1 serving, without skin or bone, of a 10 pound bird per serving. http://recipes.sparkpeople.com/recipe-deta
