Chicken Marsala

Ingredients
4 boneless, skinless chicken breasts1/4 C. cake flour1/2 tsp. Salt1/2 tsp. Oregano4 Tbsp. Oil4 Tbsp. Butter1/2 tsp. Pepper1 C. Fresh Mushrooms, sliced1/2 C. Marsala Wine
Directions
NOTE: SWEET MARSALA WINE should be used for this recipe NOT white wine. Hence the name of the dish: Chicken MARSALA. LOL!!!(Unfortunately there was no Marsala in the find a food category & I couldn't find the calories for it anywhere!)

Methods/steps
Combine flour, salt, pepper, and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the beasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.

    Definite keeper! I omitted the oil & butter and opted for EVOO. I used Italian seasoning instead of just oregano. Added the whole container of mushrooms. Don't forget to pour a bit of marsala wine in the skillet once everything is removed to drudge up the little jiblets. Will make again! - 6/4/08
