Sweet potato salad

Ingredients
150grms sweet potato 40grms spinach60grms celery100grms tomatoes30grms cucumber5 seafood sticks100grms prawn cottage cheese
Directions
clean sweet potato and place in micro wave and cook according to time scale.
rinse spinach arrange on 2/3 of plate rinse celery, tomatoes and cucumber then slice and arrange over spinach, cut each seafood stick into 3 pieces, then dot 50grams of the prawn cottage cheese over the salad.
When sweet potato is cooked slice half way into it open it out using knife and fork, then place the remaining prawn cottage cheese into the sweet potato
