Patti LaBelle's Over the Rainbow Mac and Cheese

Ingredients
1 Tbl vegetable oil1 pound elbow macaroni2 oz shredded muenster cheese2 oz shredded mild chedder cheese2 oz shredded sharp chedder cheese2 oz shredded Monterey jack cheese2 C half and half8 Oz Velveeta, cut into small cubes2 large eggs, lightly beaten1/4 tsp seasoned salt1/4 tsp black pepper
Directions
1. Preheat oven to 350 degrees F
2. Lightly butter a deep 2.5 quart casserole
3. Bring a large pot of salted water to a boil over high heat. Add the oil, then the macaroni, and cook until the macaroni is just tender.
4. Mix all of the ingredients in a large bowl.
5. Transfer to the buttered casserole.
6. Bake until it's bubbling around the edges, about 35 minutes. Serve hot.
