Slow-Cooker Green Chile Chicken Stew

4 T olive oil3 garlic cloves, minced1 large onion, diced2 lb. chicken breast, cut into bite-sized pieces4 C chicken broth2 C water2 4-oz. cans of diced green chiles3 large potatoes, diced2 medium-sized sweet potatoes, diced1 can sweet corn, drained and rinsed1 t black pepper1 t crushed, dried oregano1/2 t ground cumin1/2 t chili powder2-4 T flour (wheat or white)
1. In skillet, heat oil, then brown onions, garlic and chicken until no longer pink.
2. Add all ingredients except flour to slow cooker.
3. Cover. Cook on high for 4 hours or low for 6 hours, until potatoes are soft.
4. Make a slurry of 2-4 T of flour and 1/3 C water. Mix well, then stir into hot stew until thickened to your desired consistency. Let cook another 15 minutes, then cool a bit and serve.
