Blueberry Chicken Salad

1/2 cup light mayonnaise3 tbsp light sour cream1 tbsp minced fresh ginger1 tbsp lemon juice2 tsp grated lemon peel1/4 tsp sea salt3 cups shredded rotisserie chicken or leftover boneless chicken breasts1/2 sliced water chestnuts (halved)1/2 cup sliced green onions1/2 cup diagonally sliced celery2 cups blueberries4 cups torn tender salad greens1/2 cup sliced almonds, toasted*
Combine mayonnaise, sour cream, ginger, lemon juice, lemon peel, and sea salt in a large bowl. Stir in chicken, water chestnuts, green onions, and celery. Gently fold the blueberries; serve over greens. Top with toasted almonds.
* TIP: To toast almonds, place on baking sheet; bake at 375 degrees F for 4 to 6 minutes or until light golden brown. Cool.
