Lentil Soup

Ingredients
1.5 cups lentils1 onioncarrots (I used baby carrots. Add as much as you like)1 tsp olive oilHunt's fire roasted canned tomatoesvegetable bullion cubesbay leaf
Directions
saute onion and carrots in oil. Add tomatoes, lentils, then water and bullion cubes (along with the bay leaf). Allow to cook for 45 minutes at a simmer. Enjoy!
