Cornbread Dressing

Leftover cornbread (no oil in recipe, it is crumbly cornbread but it does not matter for making dressin')(1 cup self rising flour, 1 cup self rising cornmeal, 1 egg, 1 cup skim milk baked in 350 oven about 30 minutes)2.5 cups cooked chicken breast or pork loin (8 oz)2 bouillion cubes and 1 cup watercelery and onion seasoning (real or spices)salt and pepper and sage (to taste)1 can of cream of celery soup1 egg
Break up cornbread in a large bowl.
Add cooked chicken. (you can use rotisserie just peel off the skin, I like to cook a whole chicken in the crockpot and I bag it into 2 cup servings for recipes, you can even use pork tenderloin)
Add 1/2 cup of chopped microwaved onion or about 2 tsp of onion powder.
Add 1/2 cup of chopped microwaved celery or add a tbsp of celery flakes
Microwave one cup of water with 2 chicken stock cubes. Dissolve the cubes completely and pour into the mixture. Add the can of cream of celery soup. Then add one can of water to the mix. Add one beaten egg and mix the whole mixture by hand.
This can be made in a 1 and 1/2 quart casserole dish. Bake it on 350 oven covered with aluminum foil for 45 minutes. If you like you can take off the foil the last 10 minutes and let the top brown abit. I usually use the broiler setting for the last 5 minutes to get it nice and browned, but some people don't like it that way.
