Slow cooker Hungarian beef Goulash

500g braising/ stewing stealSeasoned flour (couple of tbs for dusting the meat)Vegetable oil for frying onions etc (1-3tbsp, as wanted)One large onion, choppedOne green pepper (capsicum), de-seeded and choppedTwo carrots, peeled and choppedOne celery stick, choppedPaprika to taste, 1-3tsp (smoked paprika is particularly good in this)Tomato puree, 3tbsp or soMixed herbs of your choice, about 3tsp to taste (I use oregano, basil and thyme, plus a couple of bay-leaves)Beef stock, fresh or from cubes - 200mlSmall can of tomatoes, chopped, around 200gRed wine (optional) 200mlWorcestershire sauce, a couple of dashes (optional)Pinch of nutmeg, preferably freshly-gratedSalt & fresh-ground black pepper to tasteNice served with rice (mixed brown & wild rice is my choice) or mashed potato/ sweet potato, and some green vegetables - none of this is included in the nutritional info, this is just for a large serving of the Goulash.
- Toss meat in seasoned flour
- Heat oil in a large pan and fry onions, pepper, carrot and celery until soft.
- Add the meat and fry until browned.
- Add the paprika, tomato puree, nutmeg, mixed herbs and seasoning and cook the meat & vegetable mixture for another 2 minutes.
- Add the stock, tomatoes, red wine and Worcestershire sauce, bring up to a simmer.
- Transfer everything into the ceramic pot of your slow-cooker, put the lid on, switch it on and select heat & time as appropriate:
* 5-7 on medium heat,
* 7-9 hours on low heat,
* or if you're in more of a hurry approx. 3 hours on the highest heat.
