Creamed Cauliflower soup

Ingredients

1 medium Cauliflower head2 c nonfat milk3 slices bacon1 tsp salt2 tsp black pepper
Chop cauliflower into florets and steam for 8-10 minutes until soft. Let cool slightly.
Using half the milk, put cauliflower in food processor with milk and puree until smooth. Transfer to large sauce pan and add remaining milk. add salt and pepper.
Cook bacon to crisp, then let cool and break into tiny pieces.
Bring soup to boil and let it warm through. Serve topped with bacon. Optional: Add cheese (not calculated in nutritional information).
Play with the spices, add Tabasco for heat or dill for bite. There is a lot you can do with this soup!
