Vegetable Fried Rice

Ingredients
1 12.3 oz. package Mori-Nu Extra-Firm Tofu1 Tbsp. canola or olive oil1 small onion, minced1 C. minced carrots1 C. fresh snow peas cut in halves1 C. chopped fresh broccoli1 C. frozen petite peas3/4 C. diced water chestnuts2 tsp. McKay's Vegan Chicken Style Seasoning3 Tbsp. Bragg Liquid Aminos7 C. cooked medium-grain brown rice1 Tbsp. 100% pure dark sesame oil
Directions
Cut tofu into small pieces. Heat oil in large skillet and saute with the onion until the onion is clear and the tofu is slightly browned. Add the carrots, snow peas, and broccoli and continue to saute for 2 to 3 minutes until vegetables are slightly cooked. (You don't want them mushy) Add the rest of the ingredients except the sesame oil and stir well. Saute 4 to 5 minutes more. Add the sesame oil and mix well. Serve hot.

Makes 10 1/2 Cup servings.
