Savory Garlic Chicken with Tomatoes

Ingredients
4 bonesless, skinless chicken breasts1 package Lipton Garlic & Herb dry soup mix1.5 tomatoes, coarsely chopped8 ounces (half package) Hodgson Mill Whole Wheat Rotini1 table spoon olive oil1/3 cup waterPart skim mozzarella cheese1/4 cup reduced fat parmesan cheese
Directions
Preheat oven to 400 degrees.
Place chicken in a 9x13 pan or casserole dish.
Chop tomatoes and place over chicken.
Mix water, oil and soup mix and pour over chicken and tomatoes.
Bake for 30 minutes.
Remove from oven and put both cheese over chicken and bake an additional 5 minutes or until cheese is melted.

Cook pasta according to package directions, minus salt.

Put chicken over pasta and serve.

Each breast equals 2 servings.

    This is a great recipe! To give it a little more flavor, I baked it with mushrooms and asparagus too. The final products was amazing! I even got my husband to eat it (and enjoy it) which is rare with healthy recipes :) - 4/15/12
