makes 4 servings approx. 2 cups
Preheat oven 350 degrees
dice tomato & spinach into pcs. & slice eggplant 1/4 in. thick
In large bowl mix, spinach, tomatoes, cottage cheese and italian cheese mix, garlic, onion & spices
lay 1/2 the eggplant to cover bottom of a casserole dish
spread veggie/cheese mix over eggplant
cover the mix w/ remaining eggplant
Bake in oven for 1 hr covered
Remove from oven uncover & let sit for 5 min
lay 2 provolone slices on top of eggplant
with cover off return to oven for approx 30 mins.
