13 Bean Soup with Ham

Ingredients
2 cups Bobs Red Mill 13 bean soup mix1 cup carrots, chopped1 cup onion, chopped2 tblsp olive oil16 oz lean ham steak1 smoked turkey thigh (for flavor only)2.5 quarts beef stock (low sodium preferred)
Directions
soak the beans for 1 hour and drain off the water. Saute onion and carrots in olive oil briefly. Add beans, stock and the turkey thigh. Bring to a boil, then reduce heat and simmer for 3.5 hours. Just before serving, heat a skillet over medium heat and cook the ham steak until heated through. Take off heat, cut into chunks and put into the soup. Serve and enjoy!
