1.5 lbs Turkey Breast1 Med Onion8.5 oz Corn Niblets15 oz Canned Black Beans - Rinsed2 4oz Cans Green Chiles12 Corn Tortillas2 19oz Cans Enchilada Sauce - Red1/2 c Reduced Fat Mexican Cheese
Cook turkey breast (poach, grill, roast) and chop. Combine with next 4 ingredients. Heat 1/2 can enchilada sauce in skillet. Soften tortillas by placing in sauce briefly but remove before they fall apart. Spray cooking spray into a lasagna size pan. Place six softened tortillas in one layer and add turkey mixture on top. Pour one can of enchilada sauce on top and then place remaining tortillas on top. Cover and bake at 350 for 45 mins or until bubbly. Sprinkle with cheese and bake uncovered for 15 mins.
