Smashing Pumpkin Homemade Soup

Ingredients
1 onion chopped1 T Olive oil4 C Chicken broth2 C pumpkin puree (100% pumpkin)3/4 C green (spring) onions, chopped1/8 t nutmeg1/2 t curry powder2 Cups milk (low fat or non fat)salt and pepper to taste
Directions
In a soup pot, heat oil over medium high heat and saute onions. Cook till very soft and add remaining ingredients, except milk. Cook uncovered for 15 minutes. Add milk and continue to cook (but not boil--it will break) for another 5 minutes.

Serve with a salad and whole grain bread if desired.
