Veggie Soup

3 medium-large sized potatoes (diced)8 oz baby carrots (cut in two)1 medium onion (diced)1/2 a bunch of asparagus (halve the stalks)1/2 a bunch of spinach (remove stems)1/2 a bunch of mustard greens (remove stems2 C green beans1/4 C green or yellow split peas1/3 C brown rice1 small head of red cabbage (cut in large pieces)2 large tomatoes(diced)4 oz mushrooms (diced in large pieces)apx 3 TB vegetable soup basesalt and pepper to taste
In a large pot bring 10 cups of water to a boil.
Add rice, peas, carrots, cabbage and potatoes.
Bring to a low boil and continue cooking for 15 minutes.
Add soup base, spinach, mustard greens, tomatoes, mushrooms, onions, asparagus and green beans.
Continue to cook for another 15 minutes.
