Ingredients
2 large eggs25g portabella mushrooms25g bresh broccoli, chopped into florets1tbsp flax seed50g red tomatoes, chopped or sliced (whichever you prefer)1tbsp salsa
Directions
one serving

saute mushrooms and broccoli for 2 or 3 minutes
add tomatoes and cook for a minute
add eggs and flax seed, scramble to your liking
i prefer to add salsa on eggs as garnish, my son prefers the salsa to be added with the flax seed and scrambled for a different flavor
