Beef Stew with Swiss Chard

2 Tsp extra virgin olive oil1 medium onion, chopped3 shallots, minced4 cloves garlic, minced2 tsp dried thyme1 tsp dried rosemary, crushed2 C cremini mushrooms, quartered2 large carrots, sliced 1/2 inch thick1 pound beef stew meat1 -14oz. can crushed tomatoes1 C beef stock4 C thinly sliced Swiss chard1 Tsp red wine vinegar1 to 2 tsp sea saltfreshly ground black pepper to taste
1. In a large skillet or pot, heat olive oil over medium heat. Add onions, shallots and garlic, saute for 5 to 7 minutes or until onions are soft and beginning to turn golden.
2. Add dried thyme, dried rosemary, mushrooms, and carrots; saute for an additional 5 minutes then add beef stew meat. Continue to saute for about 5 more minutes.
3. Add crushed tomatoes and beef stock, cover and simmer over low heat for 35 to 40 minutes stirring occasionally. Then add Swiss chard, red wine vinegar, sea salt, and freshly ground black pepper. Cover and cook an additional 5 minutes or until the Swiss chard is tender. Taste and adjust salt and seasonings if necessary.
