Cajun Shrimp Toasts with Arugula

Sauce:2 shallots, peeled and quartered1 clove garlic1/2 lemon, juiced1 tablespoon horseradish mustardpinch cayenne pepper1 tablespoon olive oil mayonnaise2 teaspoons canola or olive oil1 teaspoon no-salt added Cajun seasoning12 medium shrimp, peeled and deveined1/2 loaf (5 oz) whole-wheat or multigrain baguette, sliced 1/2-inch thick and toasted1 cup baby arugula
Prepare the sauce by pureeing all ingredients together in a blender.
Place a medium skillet over medium-high heat, then add the oil and the Cajun seasonings. Add the shrimp to the hot pan, and cook, stirring often, until the shrimp are opaque and the tails curl toward the heads, about two minutes.
Remove the shrimp from heat.
Spread each slice of bread with one teaspoon sauce, then top with a few leaves of arugula. Top with one shrimp.
Serves 12 (1 toast each)
