Breakfast Quinoa with Cranberries and Dates

Ingredients
1 C Quinoa, dry2 1/2 C Water2/3 C Dried Cranberries1/4 C Chopped Dates1 tsp Cinnamon2 tsp Ground Flax1 tsp Vanilla Extract
Directions
Put quinoa and water in a medium saucepan and bring to a boil.

Reduce to a simmer and add in remaining ingredients, except for vanilla. Cover and simmer for 17 minutes.

Remove from heat and stir in vanilla.

Serve with milk or yogurt, if desired.
