3/2 LargePotatoes1 Onion1 TBSP Olive OilI tsp of salt1 cup of chopped KalePortuguese Chorico (optional)
Put peeled and quartered potatoes in a soup pot, with enough water to cover and one small onion, also quartered. Add olive oil and salt.

Remove from the heat and using a handheld Braun (or similar) puree the potatoes, onion and water.
Put back on the stove, add water if too thick, add kale and cook for 5 minutes. You can add the chorico (slices about 1/2 inch) and cook for 2/3 minutes to release some colour.
Ready to serve, it will serve at least 4, if you like it thiner it can serve more.
